It’s true, I really don’t like beer. Ok, that’s not entirely true. I “like” certain beers “occasionally”, I just prefer other libations. Don’t get me wrong, a Belgium Leffe, Stone Pale Ale, or an incomparable Guinness can completely hit the spot, even with a plate of oatmeal chocolate-chip cookies. However, beer as an ingredient, especially braising, can add that unique flare and level of complexity. It’s been raining for the past 12 hours now, and it’s funny how the cold rainy days of early Autumn in New England instigate the need for comfort food. So, V and I quickly bantered on which side of comfort we should land. We opted for spicy tacos with slow beer-braised chicken and a Belgium-Mexican-German-Wisconsin influence.
