Veal Sausage Ragù and Chicken Cannelloni:
It goes without saying that ragù is in the top ten of most everyone’s comfort list. However, equally gratifying is the infinite variations that can be composed with the simple addition, or subtraction, of alternate ingredients. I had earlier made a batch of tomato puree from our fresh Heirloom tomatoes, but with ingredients along the lines of homemade Ketchup and keeping it thick and chunking. This puree included honey, along with cider vinegar, which added a distinct sweetness, and adding this secret ingredient to the spicy fresh ragù created a welcoming blend of flavors.
