After a rather pathetic gardening year (beetles, slugs, deer, and unusual weather) our most fruitful harvest was clearly the Asian eggplants. This variety of eggplant is long and slender with a more delicate flavor and very few seeds. V has a magic touch when it comes to preparing her favorite Asian salsa which we use as the secret ingredient for many main dishes, sandwiches, and of course as a salsa to snack. It’s one of those staples that is a must to have on-hand as I gaze into the refrigerator for inspiration.
