Cooking, for me anyway, truly is a mood. That is, how you feel influences what you will want to cook. Was today a good day and I’m feeling perky? Is it too hot outside and need to cool down? Is it the need for comfort? Something spicy? Bourbon Pork RibsPerhaps Spanish since the hurricane on its way is named “Ernesto” which is the name of that uncle who made you smile and always reminded you of rum on a stormy day. Any way you slice it – comes down to a mood and at that moment. Today’s mood is “slow”, mainly because it’s crazy hot, but the idea of slow smoked ribs and sweet mango salad hits the spot.

SECRET INGREDIENT: caramelizing the Bourbon Sauce with agave nectar (+275 oven for 3 hrs, finish on hot grill)

  • Louisiana style Pork Ribs (large cut)

Bourbon Sauce

  • shallot
  • garlic
  • 1/2 cup bourbon
  • 1 cup ketchup
  • 2 Tbl tomato paste
  • 1 ½ Tbl apple cider vinegar
  • 2 Tbl Worcester
  • 2 Tbl agave nectar
  • Hot sauce
  • Liquid smoke
  • Salt & fresh pepper

Mango Relish

  • Mango
  • 1 c watermelon
  • 2 Tbl red onion
  • 2 Tbl parsley
  • 1 tsp coriander
  • 1 tsp nutmeg
  • Lime
  • Honey
  • Olive oil
